A roux is made by frying wheat flour and rapeseed oil in an open flame pot (for about 1.5 hours, reaching a temperature of 120°C), and then fresh cream is used to create a smooth sauce. By frying the wheat flour thoroughly at a high temperature, the aroma and flavor of the wheat flour are brought out, resulting in a sauce with a rich flavor and umami taste.
