The rice used is Koshihikari rice, specially grown in Niigata Prefecture, and is aged in a snow room and ice-temperature (※) to bring out the chewy texture and delicious flavor of the rice. *This is a technique that draws out the inherent umami components of rice by cooling it to -2℃ in a warehouse with strict temperature control and aging it in the freezing temperature range for a certain period of time. In addition, the moisture content does not decrease in the snow room, and the water retention increases due to freezing temperature aging, making it ideal for frozen rice balls.
