We use 4X pork shoulder loin, which has a good balance of lean and fatty meat. This is an authentic hanging roast pork that has all the flavor of the pork left over while removing excess fat. It is marinated in a soy sauce-based sauce that uses sweet sake for 4 days before being roasted. The honey applied at the end gives it a mellow sweetness.
